Easy Refrigerator Pickled Onions

We have the easiest pickled onion recipe for you, featuring local produce from The Fry Family Farm in Medford! We love putting pickled onions on our food to finish off so many things. Top your salads, tacos, hamburgers, sandwiches, hot dogs and more to give them the perfect tangy, crunchy .
Supplies
Medium saucepan
3 16 oz Mason Jars - so you can share with friends ☺️
Ingredients
2 medium onions thinly sliced
2 cups of white vinegar
2 cups of water
1/3 cup cane sugar
2 T salt - we use kosher
Optional
3 cloves of garlic
1.5 tsp black peppercorns
Recipe
Step One
Slice onions thinly and split them between the three jars--if you have a mandolin slicer this will make the job quicker. If you are adding garlic or peppercorns also add one clove of garlic and 1/2 teaspoon of peppercorns into each jar.
Step Two
Heat up the vinegar, water, sugar and salt over medium heat until the sugar dissolves.
Step Three
Pour vinegar mixture over the onions and let cool completely.
Step Four
Put lids on and refrigerate. They will keep two to three weeks unopened.and up to two weeks open.
